Once it turns hot, cumin seeds, bay leaves and dry red chillis are thrown in. Some ginger paste and chopped tomatoes follow suit, along with basic spices, and sugar and salt to taste.

A little simmering later, cups of water are poured in and some moong dal, chopped potatoes and Gobindobhog rice are added to the pot. The mixture is then boiled and when the ingredients are partially cooked, the green peas are added. Once cooked, teaspoonfuls of garam masala and oodles of ghee are added to the pot for the final touch.
