<p>As the days of the festival unfold, the kitchens of Bengali homes become bustling hubs of activity. The aroma of spices fills the air as the holiday season brings a reason for the quintessential ‘Bangali’ to take a break from his or her otherwise hectic daily life and cook up a storm to satisfy the stomach and the heart, alike. Khichuri, the one-pot meal made from a blend of rice and lentils, finds a special place among Durga Puja recipes. This humble yet flavourful dish, especially when made with fresh green peas, adds a deliciously warm touch to the festivities.</p>
<p>Not all get a chance to drop into their ‘para (neighbourhood)’ pandal to feast on the Bhoger Khichuri (dish offered to the deity). Sometimes, even if there is a chance, people would rather give it a miss due to the scorching heat of Bengali afternoons. However, the occasion is such that without the Khichuri, Durga Puja celebrations seem incomplete. This is simply one of those Bengali dishes you can&#8217;t miss during Durga Puja!</p>
<p>The Bangali indulges himself or herself by making this Durga Puja special dish at home. Besides, the ‘Koraishuti/Matarshuti diye Khichuri (Peas Khichuri)’ is so easy to make that even a child can cook it! Into a pot goes a little bit of ghee. Once it turns hot, cumin seeds, bay leaves and dry red chillis are thrown in. Some ginger paste and chopped tomatoes follow suit, along with basic spices, and sugar and salt to taste.</p>
<p>A little simmering later, cups of water are poured in and some moong dal, chopped potatoes and Gobindobhog rice are added to the pot. The mixture is then boiled and when the ingredients are partially cooked, the green peas are added. Once cooked, teaspoonfuls of garam masala and oodles of ghee are added to the pot for the final touch.</p>

										<content:encoded><![CDATA[<p>Durga Puja is just around the corner and we are super excited! “Bangali manei Pujo, Bangali manei pet puja (Bengalis are synonymous to Durga Pujo, and Bengalis are synonymous to food)!”</p>
<p>As the air fills up with the smell of Shiuli ‘Phool (flower)’, the ‘Kash Phool (Kans Grass)’ pops up here and there, Bengal gets decked up to celebrate its most extravagant event of the year. As is ritual, pandals across the state and especially in Kolkata will get flooded with enthusiastic pandal hoppers and evenings will end with joyous get-togethers. Family and friends will return to the city and guests will start pouring into your home. Wouldn’t it be nice if you could treat them to something traditional yet something homemade?</p>
<p>This Durga Puja, pleasantly surprise your guests with some of Bengal’s best desserts made at home. All you need are packs of Keventer Metro Cow Milk or Keventer Metro Rich Milk and a few basic ingredients.</p>
<p>Before you start making these sweet Bengali milk dishes, the first thing you need to do is boil the milk and add some lemon juice or vinegar to make some ‘chhena (cottage cheese)’. Hang the ‘chhena’ in a cotton cloth and let the water drain out. There! Your key ingredient is ready for one…two…three.. oh so many easy DIY Bengali sweets!</p>
<p>Begin with the ‘Roshogolla’. Yes! Bangalis don’t call it Rasgulla because they fill the sweet with the ‘Rosh of labh (the syrup of love)’! The art of making it right, lies in kneading the ‘chhena’ right and turning it into perfectly round balls. Boil it in some thick syrup made of sugar and water, and you’re done!</p>
<p>Don’t forget to try the Chhanar payesh – the traditional Bengali kheer made with cottage cheese and thick cow milk.</p>
<p>If you want to appear all fancy, Sandesh is your next level up. BTW, Kalakand isn’t as tough to make as you think.</p>
<p>However, if you do not want to go through the trouble of making cottage cheese but still prepare a delicious sweet dish at home, we have another milk recipe up our sleeve! Simply make the Chaaler Payesh (traditional Bengali Kheer made of rice).</p>
