Durga Puja is just around the corner and we are super excited! “Bangali manei Pujo, Bangali manei pet puja (Bengalis are synonymous to Durga Pujo, and Bengalis are synonymous to food)!”
As the air fills up with the smell of Shiuli ‘Phool (flower)’, the ‘Kash Phool (Kans Grass)’ pops up here and there, Bengal gets decked up to celebrate its most extravagant event of the year. As is ritual, pandals across the state and especially in Kolkata will get flooded with enthusiastic pandal hoppers and evenings will end with joyous get-togethers. Family and friends will return to the city and guests will start pouring into your home. Wouldn’t it be nice if you could treat them to something traditional yet something homemade?
This Durga Puja, pleasantly surprise your guests with some of Bengal’s best desserts made at home. All you need are packs of Keventer Metro Cow Milk or Keventer Metro Rich Milk and a few basic ingredients.
Before you start making these sweet Bengali milk dishes, the first thing you need to do is boil the milk and add some lemon juice or vinegar to make some ‘chhena (cottage cheese)’. Hang the ‘chhena’ in a cotton cloth and let the water drain out. There! Your key ingredient is ready for one…two…three.. oh so many easy DIY Bengali sweets!
Begin with the ‘Roshogolla’. Yes! Bangalis don’t call it Rasgulla because they fill the sweet with the ‘Rosh of labh (the syrup of love)’! The art of making it right, lies in kneading the ‘chhena’ right and turning it into perfectly round balls. Boil it in some thick syrup made of sugar and water, and you’re done!
Don’t forget to try the Chhanar payesh – the traditional Bengali kheer made with cottage cheese and thick cow milk.
If you want to appear all fancy, Sandesh is your next level up. BTW, Kalakand isn’t as tough to make as you think.
